Yarden Botrytis is made from Semillon grapes from two vineyards in the Golan Heights, Ein Zivan and Yonaton.  Selected ripe clusters were carefully hand picked into small trays and transported to the winery.  Under special conditions, the fruit was infected with Botrytis spores originally isolated from the Golan Heights vineyard Ortal. The wine is intense, concentrated and the enjoyment continues through a long finish. 

While ready to enjoy, we anticipate that Yarden Botrytis will slowly develop more character in the bottle, building ever greater complexity, and should be capable of ageing for many years to come.  We enjoy sipping this wine alone as dessert, though you can freely pair it to many sweet courses, due to the richness of the wine.  For a special occasion, try sipping along with fois gras.

Tasting Notes: Yarden Botrytis displays a rich blend of characters:  apricot, pear, flowers, orange marmalade, papaya, and peach with hints of nutmeg spice.
